Instructions:

Start off by putting the oil in a large pot and cooking it on medium heat. Add the celery and onion and cook the for 4 minutes until they soften, then add the broccoli stems and potatoes and cook for 2 more minutes, before pouring in the chicken broth and almond milk. Next, wait for the mixture to boil, then add the spices.

Lower the heat, cover the pot and let the soup simmer for 20 minutes. Once the vegetables are tender, transfer the mixture in a blender and blend it until smooth.
